Main Ingredients
  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (optional) Feel free to add any type you like, such as bell peppers, peas, or carrots.
  • Chopped green onions for garnish For serving

Method

Preparation
  1. Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat a skillet over medium heat and sear the chicken for 3–4 minutes on each side until golden brown. Remove the chicken and set it aside.
  3. In a bowl, mix together the BBQ sauce, honey, soy sauce, and minced garlic.
Cooking
  1. In the same pan, toast the uncooked rice for 1–2 minutes.
  2. Add the chicken broth and half of the sauce to the pan, stirring to combine.
  3. Return the chicken to the pan and pour the remaining sauce over the top.
  4. Cover and simmer on low heat for 15 minutes.
  5. Add mixed vegetables, cover, and cook for 5 more minutes or until the rice is tender and the chicken is cooked through.
  6. Let it sit for 5 minutes. Garnish with green onions and serve hot.

Notes

Make sure not to overcook the chicken to keep it juicy. You can adjust the sweetness by adding more or less honey, depending on your taste. Feel free to use frozen mixed vegetables if desired.
