  • 4 cups vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced

  • Fresh cilantro for garnish
  • Lime wedges for serving

Method

Cooking Instructions
  1. In a pot, sauté onion, garlic, and ginger until they’re nice and softened.
  2. Stir in the red curry paste and cook for another minute to bring out those fabulous flavors.
  3. Add the red lentils, coconut milk, and vegetable broth.
  4. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until lentils are tender.
  5. Season with salt and adjust the soup's consistency with more broth if you like it a little thinner.
  6. Serve hot, garnished with fresh cilantro and lime wedges.

Notes

Pro Tip: Give the garlic a little time to toast—this makes all the difference in flavor. Variations: Consider adding chopped spinach or kale, or switch up the curry paste to green. You can also add diced veggies like carrots or bell peppers for a twist.
