Ingredients

For the cheesecake filling
  • 85 g cream cheese
  • 15 g sugar for filling
  • 1/2 tsp vanilla extract for filling
  • 50 g fresh strawberries, diced
For the strawberry compote
  • 15 g sugar for strawberry compote
  • 1 tsp lemon juice
For the cookie dough
  • 115 g butter, softened
  • 90 g sugar for cookie dough
  • 1 large egg yolk
  • 1 tsp vanilla extract for cookie dough
  • 130 g all-purpose flour
  • 1/4 tsp baking powder
  • Strawberry compote Strawberry compote used to mix in cookie dough

Method

Preparation
  1. In a mixing bowl, beat cream cheese, 15 g sugar, and 1/2 tsp vanilla until smooth. Scoop small portions onto a tray and freeze until firm (about 1–2 hours).
  2. In a pot, combine 50 g diced strawberries, 15 g sugar, and 1 tsp lemon juice. Cook over medium heat until thickened and jammy. Let it cool.
  3. Preheat your oven to 175°C (350°F).
  4. In a clean bowl, mix 115 g butter and 90 g sugar until fluffy, then add 1 egg yolk and 1 tsp vanilla.
  5. Stir in 130 g flour and 1/4 tsp baking powder, then fold in the cooled strawberry compote.
Assembly and Baking
  1. Scoop cookie dough, flatten it, and place a frozen cheesecake filling inside. Wrap the dough around it, seal, and place on a tray.
  2. Bake for 11–12 minutes until the edges are set.
  3. Let cookies cool slightly — the cheesecake center will firm up as they rest.

Notes

Serve slightly warm with vanilla ice cream or drizzle with leftover strawberry compote. Store in an airtight container for 3-4 days or freeze for 1-2 months.
