Notes

Don’t overmix! A few lumps in the batter are perfectly fine; it keeps the pancakes fluffy. For an even fluffier texture, let the batter rest for about 5 minutes before cooking. If you’re feeling fancy, swap in buttermilk for a richer flavor. Adding a pinch of cinnamon or nutmeg spices things up nicely! Got leftovers? These pancakes can chill in the fridge for about 3–4 days. If you want to keep them longer, toss them in the freezer, and they’ll last for a couple of months. For a quick breakfast, just pop them in the toaster or microwave.
