Ingredients

For the ceviche
  • 1 lb shrimp, peeled and deveined Fresh shrimp is recommended for the best taste.
  • 1/2 cup lime juice Freshly squeezed lime juice is best.
  • 1 ripe mango, diced Ensure the mango is ripe for optimal sweetness.
  • 1 avocado, diced Be gentle when mixing to avoid mashing.
  • 1/4 red onion, finely chopped
  • 1 jalapeño, minced (optional) Adjust based on personal spice preference.
  • 1/4 cup cilantro, chopped Adds a fresh burst of flavor.
  • Salt and pepper to taste

Method

Preparation
  1. In a bowl, combine the shrimp and lime juice. Let it marinate for about 15-20 minutes until the shrimp turn opaque.
  2. Add the diced mango, avocado, red onion, jalapeño, and cilantro to the bowl.
  3. Gently mix everything together, ensuring not to mash the avocado.
  4. Season with salt and pepper to taste.
  5. Serve chilled, optionally with tortilla chips or on its own.

Notes

Leftovers can be stored in the fridge for about 2-3 days, though the avocado may brown. Best served fresh. Variations include using pineapple or papaya instead of mango, or substituting shrimp with hearts of palm or canned chickpeas for a vegan option.
