Preparation
- In a bowl, mix the marinade ingredients. Toss in the skirt steak, coating it well. Let it marinate for a few hours or even overnight.
- Remove the steak from the fridge 30 minutes before cooking.
Cooking
- Preheat your oven to 400°F. Slice the red pepper and onion, place them on a sheet pan, drizzle with 1/2 tablespoon olive oil, and season with salt, pepper, and 1/2 teaspoon cumin.
- Roast the veggies for 15 to 20 minutes until tender.
- In a large skillet, heat 1/2 tablespoon avocado oil over medium heat, stir in the riced cauliflower, cooking until slightly golden and tender, about 15 minutes.
- Season the riced cauliflower with salt and pepper, then transfer to a bowl and cover to keep warm.
- Shake off excess marinade from the steak. In the hot skillet, add 1 tablespoon of avocado oil.
- Cook the steak for 2 to 3 minutes per side for a juicy medium-rare finish (130 degrees F). Let it rest for 5 minutes before slicing against the grain into thin strips.
Assembly
- Divide the riced cauliflower, roasted veggies, and steak evenly into three bowls. Serve immediately!
Notes
Serve with a squeeze of fresh lime or a dollop of guacamole. Add crunchy tortilla strips for extra texture. For longer storage, freeze individual portions and reheat with a splash of water.
