Ingredients

Dry Ingredients
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup milk Use almond milk for a vegan version.
  • 1 large egg You can substitute with a flax egg for a vegan version.
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Method

Preparation
  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, mix the milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Preheat a non-stick skillet over medium heat.
Cooking
  1. Pour 1/4 cup of the batter onto the skillet for each pancake.
  2. Cook until bubbles form on the surface, then flip and cook until golden brown.
  3. Serve warm with your favorite toppings.

Notes

Letting the batter rest for a few minutes can make those pancakes even fluffier. Don’t overmix the batter—a few lumps are okay. Store extras in an airtight container in the fridge for up to 3 days or in the freezer for up to a month.
