Ingredients

Main Ingredients
  • 2 pieces chicken breasts, diced
  • 8 oz pasta (fettuccine or spaghetti) Any pasta shape works.
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced Toasting the garlic enhances flavor.
  • 1 cup heavy cream Can substitute with half-and-half or dairy-free options.
  • 1 cup grated Parmesan cheese Can substitute with Grana Padano or vegan Parmesan.
  • Salt and pepper to taste
  • Fresh herbs (parsley or basil) for garnish

Method

Preparation
  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook until the chicken is no longer pink.
  3. Add minced garlic and sauté for 1 minute until fragrant.
  4. Pour in the heavy cream and bring to a simmer.
  5. Stir in Parmesan cheese until melted and the sauce thickens.
  6. Combine the cooked pasta with the sauce and chicken, mixing well.
  7. Serve hot, garnished with fresh herbs.

Notes

Store leftovers in the fridge for 3–4 days. Reheat on the stovetop, adding a splash of cream or broth if too thick. For vegan options, substitute chicken with chickpeas and heavy cream with coconut cream.
