Ingredients

Base Ingredients
  • 6 large large eggs
  • ⅔ cup whole milk
  • ¼ cup half-and-half
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 1 teaspoon Dijon mustard (optional)
  • pinch ground nutmeg (optional)
Mix-Ins
  • 1½ cups mix-ins of choice (e.g., ⅔ cup grated Gruyère cheese, 2 tablespoons chopped fresh chives, cooked crumbled lean beef, sautéed broccoli, caramelized onions, cubed leftover roast beef, or roasted vegetables)

Method

Preparation
  1. Preheat oven to 375°F (190°C) and grease a 9-inch pie dish.
  2. Sauté chosen vegetables until soft and set aside to cool.
  3. Whisk together the eggs, milk, half-and-half, salt, pepper, mustard, and nutmeg.
  4. Fold in the chosen mix-ins and pour the mixture into the prepared dish.
Cooking
  1. Bake for 40 to 55 minutes until golden brown and set.
  2. Cool for 10-20 minutes before slicing.
  3. Serve warm, preferably with a fresh green salad.

Notes

Let the quiche sit after baking for flavor to settle and for a cleaner slice. Use a variety of colorful vegetables for a beauty boost. Add more half-and-half for a creamier texture.
