Method

Preparation
  1. Preheat the oven to 400°F (200°C) and butter a 2-quart casserole dish.
  2. Slice the potatoes into 1/8 inch thin slices. (A mandoline is your best friend here!)
Cheese Sauce
  1. In a saucepan, melt the butter and sauté the garlic for 1 minute.
  2. Add the flour and cook for 1 minute.
  3. Gradually whisk in the milk and cook until thickened.
  4. Stir in the cheeses, mustard, thyme, paprika, salt, and pepper until smooth.
Layering and Baking
  1. Layer half of the potatoes and onions in the casserole, pouring half of the cheese sauce over them, then repeat layers.
  2. Top with additional cheeses. Cover with foil and bake for 60 minutes.
  3. Remove the foil and bake for another 25-30 minutes until golden.
  4. Garnish with chives and parsley before serving.

Notes

Store leftovers in the fridge for about 3-5 days. For longer storage, freeze for up to three months in an airtight container. Reheat in the oven until bubbly. Experiment with different cheeses for added flavor.
