Ingredients

For the Salmon
  • 4 pieces skinless salmon fillets (85–115 g each)
  • 2 teaspoons olive oil for brushing
  • 2-2.5 tablespoons Cajun seasoning for coating
  • 2 teaspoons high heat oil (avocado, coconut, or ghee for searing)
For the Sandwich Assembly
  • 4 pieces soft sandwich buns (sourdough or brioche recommended)
  • 60 ml Dilly Ranch or creamy herby hemp dressing for drizzling
  • 80 grams mixed greens (lettuce, spinach, and sprouts)
  • 1 small red onion thinly sliced
  • 0.5 pieces cucumber thinly sliced
For the Seasoning
  • 2 teaspoons smoked paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon fine sea salt
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon cayenne pepper (to taste)

Method

Preparation
  1. Allow salmon fillets to rest at room temperature for 20 minutes.
  2. In a bowl, mix together smoked paprika, garlic powder, onion powder, salt, oregano, thyme, black pepper, and cayenne.
  3. Pat salmon dry and brush lightly with olive oil. Coat with Cajun seasoning.
Cooking
  1. Heat a pan over medium-high heat, add high heat oil, and sear salmon skinless side down for about 4 minutes.
  2. Flip and cook for 3-6 more minutes until nicely blackened.
Assembly
  1. Toss mixed greens with some dressing in a bowl.
  2. Toast buns in a dry pan or toaster until golden and crispy.
  3. Assemble the sandwich with salmon, cucumber, red onion, and greens. Drizzle with extra dressing and serve immediately.

Notes

Timing is key: Don’t rush the salmon; each side should be seared properly to develop that delicious blackened crust. Ingredient swaps: Swap the dressing for a spicy aioli if you’re feeling adventurous! The cucumbers add flavor and a refreshing crunch that pairs beautifully with the salmon's richness.
